The History

Ultimate Dining Experience

Established in 2015, Cello Ristorante & Bar at Allegretto Vineyard Resort is designed to delight. Named after the shape of the Allegretto’s architectural footprint, as well as the instrument that produces tones that most closely resemble the human voice, Cello is about the human touch as much as it is about fresh ingredients and creative preparation. We celebrate every farmer, rancher, fisherman, chef, server and dishwasher who makes your dish possible, and we celebrate you for joining with us to delight in the bounty of Paso Robles and the Central Coast.

Cello Ristorante & Bar is a culinary getaway that brings guests’ senses deeply into the Allegretto culture of joy, discovery and the good life. Executive Chef Justin Picard brings his extensive culinary experience to Paso Robles, where his formal training coupled with a talent for marrying domestic and international flavor profiles seamlessly combine to elevate the overall dining experience at Allegretto. With creative dishes made from regionally farmed and foraged ingredients, alongside an extensive domestic and international wine list, garden-to-glass cocktails, and craft beers, Cello is an upscale, casual Mediterranean-inspired restaurant that delights locals and visitors alike whether they dine poolside, in-room, or at our catered events.

We visited Cello without prior knowledge of the food or atmosphere and were blown away by the experience! It’s like eating in an art museum with amazing grounds and friendly, knowledgeable service. The menu was innovative – familiar wine country dishes with inventive (and delicious) twists to keep it interesting. Every course suddenly became “the best [fill in the blank] I’ve ever had.” Well worth a visit, and leave some time to explore.

Founder & Visionary

A fourth-generation Southern California resident, Doug found himself drawn to the stunning natural environment and warm-hearted people of Paso Roble about fifteen years ago. His natural passion for crafting relaxing experiences in incredible surroundings, paired with years of practical knowledge gleaned from working with his forefathers in the family business of land and hotel development, makes Doug the ideal person to helm this endeavor. Designing something that will delight anyone who visits and give them an unforgettable taste of all the Central Coast has to offer is Doug’s vision, and it’s a vision that comes to life for everyone who steps through the door of Cello Ristorante.
JUSTIN PICARD

Executive Chef

Chef Justin Picard brings not only years of prestigious training, but experience that spans the globe, to the kitchen and tables of Cello Ristorante. After his graduation from New York’s Culinary Institute of America, Chef Picard’s professional experience includes some of the most celebrated kitchens of Aspen, San Francisco, and abroad; involvement in some of this country’s best culinary events; and two guest appearances at New York City’s James Beard House. A master of blending international culinary delights with fresh, local ingredients, he is passionate about the food and wine prowess of the Central Coast. 
THOMAS HUMPHREY

Director of Food & Beverage

A California native with over 30 years of experience working in the luxury hospitality industry, Thomas Humphrey oversees all aspects of Cello Ristorante & Bar to ensure guests receive a culinary experience created from only the highest quality ingredients. Thomas’ professional career has taken him across the United States, with notable positions including Director of Restaurants at Four Seasons Hotel locations in Seattle, Atlanta, and Westlake Village, CA. With Thomas’ passion for excellence and decades of experience, every guest can be assured that their plates and glasses hold nothing but the best that the Central Coast has to offer.
